Some bread loaves and coffeecakes use baking powder or baking soda for leavening agents instead of yeast. Some people will call them “quick breads” since they do not require time to rise or for kneading. Bakers will usually add fruits, nuts, oats, vegetables and spices to add flavor. This loaf is flavored with cinnamon.
